The beginning of 2013


I have been busy for the past 2 months (dec 2012 and jan 2013) which is the reason why I was m.i.a. but good thing today is my rest day, I can at least share a few things that has happened recently to my life. Kicking off 2013, I became part of the biggest and mightiest organization in the country: SM ♥ and for sure I will make postings related to the SM Aura Premier opening soon in Taguig. I am really grateful and thankful for this. Please support SM Accessories too by following its twitter account and facebook page.


Love is also in the air 'coz 2 of my wonderful friends got married. Congrats to Jackie♡She and Nikelle♡Melaine! Keep the fire burning yiheeeee! I am really amazed when 2 people finds their happily ever after♡♡♡


We faced a sad event in our family when our Tita Feny passed away... I look up to her and despite the busy schedule, we try to visit her from time to time. Unfortunately, God called her and she will be missed dearly.


These are so far the highlights of my ending 2012 and beginning 2013. New job, new people, new places, new year and hopefully a better new me =)

Red Velvet Cupcake it is!

I got soooper excited when I saw Bake Happy's blog! Aikko (the owner) featured all the goodies!!! Then, I saw her post on how to make a Red Velvet Cupcake and immediately wrote the recipe down. I am no baker but I really wanted to try my "baking skills" haha! Plus, I find the ingredients and tools a bit pricey so I didn't know how and when to start... until now! Thank you so much Bake Happy for sharing your talent to us!


Red Velvet Cupcakes (Adapted from Bake Happy)

Ingredients:


Cupcake liners
3-3/4 cups flour (I used all purpose flour)
1/4 cups cocoa
1-1/2 teaspoons baking soda
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1-1/2 cups yakult
3 teaspoons apple cider vinegar
1-1/2 teaspoons vanilla
1 bottle red McCormick food color 
2 cups sugar
3/4 cups butter 
3 eggs



(1) Combine yakult, red food color, vinegar and vanilla extract. Mix well. Set aside.


(2) Combine all dry ingredients - flour, cocoa, baking soda, baking powder and salt. Dry whisk or sift, it's up to you, just make sure everything is well combined. Set aside.


(3) Cream together butter and sugar until light and fluffy. Since I do not have an electronic mixer, I creamed it manually, woohoo! A nice arm workout!


 (4) Add eggs one at a time.



(5) Add in one third of the dry ingredients. Mix slightly. Then add one half of the mixture from step #1 - otherwise known as the wet ingredients.


(6) Repeat until the last of the dry ingredients are added into the batter. Make sure to just barely mix, only until everything is combined.



 (7) Bake for 15 minutes at 350F. But our microwave oven features "Power Level" so I set mine into Power Level 5 for 10 minutes only.



TADAAAAAAHHHHHHHH!!!! I have yet to learn how to make a frosting but for the meantime, I am very happy with the outcome and it tasted well! The toothpick in the photo is used for checking if the cupcake is already done. If the whole toothpick can be pulled-out easily, then the cupcakes are good to go! Gimme some muffin love!!! =) =) =)
