Red Velvet Cupcakes (Adapted from Bake Happy)
Ingredients:
Cupcake liners
3-3/4 cups flour (I used all purpose flour)
1/4 cups cocoa
1-1/2 teaspoons baking soda
3-3/4 cups flour (I used all purpose flour)
1/4 cups cocoa
1-1/2 teaspoons baking soda
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1-1/2 cups yakult
3 teaspoons apple cider vinegar
1-1/2 cups yakult
3 teaspoons apple cider vinegar
1-1/2 teaspoons vanilla
1 bottle red McCormick food
color
2 cups sugar
3/4 cups butter
3/4 cups butter
3 eggs
(1) Combine
yakult, red food color, vinegar and vanilla extract.
Mix well. Set aside.
(2) Combine all dry
ingredients - flour, cocoa, baking soda, baking powder and salt. Dry whisk or
sift, it's up to you, just make sure everything is well combined. Set aside.
(3) Cream together butter and sugar until light and fluffy. Since I do not have an electronic mixer, I creamed it manually, woohoo! A nice arm workout!
(4) Add eggs one at a time.
(5) Add in
one third of the dry ingredients. Mix slightly. Then add one half of the
mixture from step #1 - otherwise known as the wet ingredients.
(6) Repeat until the last
of the dry ingredients are added into the batter. Make sure to just barely mix,
only until everything is combined.
(7) Bake for 15 minutes at 350F. But our microwave oven features "Power Level" so I set mine into Power Level 5 for 10 minutes only.
TADAAAAAAHHHHHHHH!!!! I have yet to learn how to make a frosting but for the meantime, I am very happy with the outcome and it tasted well! The toothpick in the photo is used for checking if the cupcake is already done. If the whole toothpick can be pulled-out easily, then the cupcakes are good to go! Gimme some muffin love!!! =) =) =)
